500°
San Isidro, Lima (2016-2017)
Restaurant
Chef Jaime Pesaque approached us to develop a new restaurant whose concept was based on two wood-fired ovens: one for dough and the other for traditional food. We made those ovens the ultimate protagonists of the place, and since they operated at 500° C and 280°C (~500°F) we named them Celsius and Fahrenheit, hence the name of the restaurant ‘500°’. The space available was so irregular that the ovens’ position became also the main organizing references for the whole layout and materiality.
