Peruvian chef Mitsuharu Tsumura gained world reputation with his daring nikkei cuisine (peruvian japanese fusion) in his restaurant Maido. Despite its amazingly creative food, the spatial experience fell short. He asked us to renovate the restaurant and we radically transformed the space by clarifying his conceptual framework into a spatial alter ego.
