Maido
Miraflores, Lima (2014)

Peruvian chef Mitsuharu Tsumura gained world reputation with his daring nikkei cuisine (peruvian japanese fusion) in his restaurant Maido. Despite its amazingly creative food, the spatial experience fell short. He asked us to renovate the restaurant and we radically transformed the space by clarifying his conceptual framework into a spatial alter ego: How to be peruvian and japanese without nikkei cliches? How to expand beyond our known limits and traditions? How to find the right spatial experience to such creative cuisine? ... and achieving all of that without closing his -many months ahead- fully booked restaurant by working off hours.
After the renovation, Maido made its debut on The World’s 50 Best Restaurants list at No.44 in 2015. It was named The Best Restaurant in Latin America for three consecutive years between 2017 and 2019, while in 2023 climbed to No.6 in the World.
