SAPIENS
Miraflores, Lima (2018-2019)
Restaurant

After the success of 500°, chef Jaime Pesaque called us to develop the idea of a new concept: a restaurant where absolutely everything revolved around embers with different types of burners: firewood, charcoal, corncobs and herbs.

We acknowledged the mastery of fire as the origin of our technology, something that essentially separates us from the rest of the species on the planet. Fire cooking food was what gave way to the evolution of a hominid with a larger brain and a smaller jaw: Homo Sapiens. Thus, we named the restaurant in its honor and sought to create a space that is both primitive and contemporary.
